Too Much Chocolate Black Bean Brownies!

A colleague of mine gave me a recipe that has officially blown me away. I made them for the first time tonite and have to share it immediately. Do not let the ingredients scare you off....they are amazing and very healthy.

I made my first batch this afternoon. After one square, I had had enough chocolate. If you have a chocolate craving this quick fix is well worth it and completely healthy (considering the other options). If you make this or tweak the recipe for the better, please leave a comment. Too Much Chocolate Black Bean Brownies

Makes 9 squares and takes approximately 55 minutes.

  • 1 can (19 oz) black beans drained (no judgement)
  • 3 eggs, beaten
  • 1 tbsp butter (they call for margarine but I'd rather keep it real)
  • 1 tbsp yogurt (I used vanilla Greek but any will do)
  • 1/2 cup sugar
  • 1/2 cup cocoa powder
  • 1 tbsp instant coffee
  • 1 tsp vanilla extract


Preheat oven to 350 and grease an 8x8 square dish or pan (greased)
  1. Drain and rinse the can of black beans and squish them into submission (I used a potato masher but a blender or fork will do)
  2. In a large bowl, mix together the beans and blended eggs until egg is incorporated
  3. Add in the remainder of ingredients. Mix until you get a brown consistency (looks just like brownie batter).
  4. Pour mixture in dish and bake for approximately 30 - 35 minutes or until the toothpick comes out clean.
  5. Be sure to let sit until cooled...I dug in right away and it fell apart but once it sat, it became solid and brownie-like.
